Fresh Mango Salsa

Nothing is as great as the flavour of a fresh, ripe mango. Something about the complex taste drives me crazy! On that note, this recipe takes your typical salsa, and gives it a tropical twist, by replacing the tomato with something way better – mango. It’s not that hard to make a good salsa, but a lot of people haven’t made their own before, so this is a solid recipe for beginners, or an idea for those who have only made the traditional kind.

There are a wide variety of mangoes, and I found that you don’t actually have to be picky when choosing what type for this recipe. The Ataulfo mangoes (pictured below) are far smaller than the green ones, with a definite difference in flavour, but they still work great for the salsa. These are also known as yellow, baby, young, or Champagne mangoes. They are a Mexican cultivar. They are not always available, and I was just using them to experiment – so feel free to use whatever is available, or whatever your preferred mango is.

Mango Salsa

Serves 4

Ingredients:

2 large mangoes, chopped into small chunks

1 medium onion, finely chopped

1 small bunch of cilantro, finely chopped

2 small limes

2-3 garlic cloves, finely chopped

habanero or jalapeño pepper to taste

Himalayan Pink salt and pepper to taste

Instructions:

Put a small handful of mango chunks, the juice from the limes, chopped garlic, chopped cilantro, and your choice of hot pepper into your food processor or blender and blend until it reaches a smooth consistency, perhaps with a few small chunks. Put the rest of the mango, the onion, and the sauce in a bowl and mix up. Salt and pepper it to taste.
