2 large mangoes, chopped into small chunks
1 medium onion, finely chopped
1 small bunch of cilantro, finely chopped
2 small limes
2-3 garlic cloves, finely chopped
habanero or jalapeño pepper to taste
Himalayan Pink salt and pepper to taste
Put a small handful of mango chunks, the juice from the limes, chopped garlic, chopped cilantro, and your choice of hot pepper into your food processor or blender and blend until it reaches a smooth consistency, perhaps with a few small chunks. Put the rest of the mango, the onion, and the sauce in a bowl and mix up. Salt and pepper it to taste.
