No Bake Fruit Crumble

Who doesn’t struggle finding guilt-free desserts? Out of all desserts I have ever had – raw vegan desserts have never made me feel bad, and have left me feeling clean and satisfied. There is nothing worse than feeling guilty after eating your hearts content of sweets. Instead of going for typical desserts like an apple pie or cheesecake, be adventurous and try making this! You won’t regret it. This recipe of mine takes a simple cashew cream and converts it into the holy grail of fruit pies. You will need a blender, food processor, and a pie pan or glass bowl.

No-Bake Fruit Crumble 

Serves 5

Ingredients for the crust:
– ¼ cup cashew butter
– 8 dates, pitted and chopped
– 2/3 cup coconut flakes

Ingredients for the fruit sauce
– 1 ½ cups seasonal fruit (berries, peaches, mangoes, cherries, bananas, etc)
– 1 heaping tbsp. raw honey

Ingredients for cashew crème:
– ¼ cup cashew butter or ½ cup cashews, soaked for 1-2 hours
– 1 lemon or 1 large lime
– 1 heaping tbsp. raw honey
– 1 inch grated ginger

Instructions:
Put the ingredients for the crust in a food processor and blend it up until it balls up. Leave a little bit of the crust on the side for later. Squeeze the rest of the crust up into a ball and then spread onto a glass pan.

Before you blend up the fruit sauce, put half of the fruit aside. Take this fruit and spread it over the crust in whatever way you fancy. Blend up the ingredients for the fruit sauce and then pour it over the contents of the pan. Crumble the rest of the crust up on top of this.

Clean the blender and then make the cashew crème. Adjust ingredients to taste – i.e. more ginger for a nice kick, more honey for sweetness, or more lemon for more of a bold flavour. Pour the crème over everything. Decorate top with any remaining fruit and chill for 2-3 hours before serving.

If you want to make a trifle or parfait out of this – simply repeat this layering process over and over again until you fill the bowl up!

Notes

Let cool for 2 hours minimum or overnight.
