Vegan French Toast

Ahh… French Toast. Everyone loves French Toast – but that isn’t what’s in question. Can it be made healthily? Will it still be delicious? I say yes. This is my recipe for the perfect French Toast – and you don’t need to worry – there are no eggs or butter in this recipe and could surely be made with gluten free bread.

Vegan French Toast

Ingredients:

Serves 1.

Your favourite organic bread

Nut milk
(pecan milk by Malk is what I use, if not home made)

Fresh ground flax seeds or flax meal

Coconut oil

Cinnamon

Maple syrup, fruit, or your preferred toppings

Instructions:

Put a 1 : 3 ratio of flax meal and nut milk in a bowl and stir. Let sit for 10 – 15 minutes, stirring occasionally. Heat up a pan with some coconut oil on top – do not be stingy when doing this either, or else all the toast will do is stick. While the pan is heating up, soak your bread on either side in the mix. When the pan is ready, put the toast on it and let it cook for a few minutes at medium heat. I have found that the toast is less likely to stick if you leave it alone. Flip the toast over onto the other side, and wait a few minutes for this to brown as well. You may flip between the two sides a bit near the end to get them both browned. Once both browned, transfer to a plate, top with cinnamon and whatever else you desire, and dig in.

Repeat the steps until you are satisfied. Voila!  You are done.
